I want to test the various options to send electronic tax organizers to some of our 1040 clients. How can I test the available options to see both sides of the experience (Clients and firm)?

Be a client. Put your return in and test to yourself. OR just restore one of the demo clients OR copy one of your current clients and put your e-mail address into the file.
