Once I enter a number on line 18 to defer SE tax I can no longer access that form. WHERE IS IT ... WHAT IS IT CALLED?

Go to the 1040/1040SR worksheet - Quickzoom to Schedule 3 - there you will find a Smart Worksheet for the SE Deferral . Enter zero on line 11 to opt out of the deferral
