Why doesn't the form 8879 show estimated tax payments along with taxes withheld

Because that's how IRS designed it?

A client was hesitant to sign it as it did not show the total amount of taxes he had paid for 2020, only the withholding. If we expect clients to sign the form, the form should be correct as it is the release form for filing the tax returns. I find it disturbing and it would not be difficult to show total amount of taxes paid during any given year...and more meaningful.

You cant force them in there, the line clearly says Federal Income tax Withheld.
They'll have to review the actual return to see all payments.

The software can only present the forms as dictated by the IRS schemas.  Take it up with them.
