Column heading EF Status and E-Signature status are not options in my column heading pick list. Using ProSeries Professional.

I'll ask the obvious question first...youre sure your in EFCenter?

If you exit the program and restart does that fix the issue?   The columns in EF Center are not able to be moved. adjusted or deleted and saved, so a restart of the program should bring them back if its just some oddball type of thing.
