The business dissolved around Mid March so the due date for the return will be towards the end of June this year which I am guessing will be before any 2021 forms are approved/released.

First - extend it.
Then if the software isn't ready, you can prepare on 2020 forms marking up for 2021 dates and considering any 2021 law changes. You will file on paper. EDIT: Yes I would make a copy of the 2020 file to do this.
