How do I stop depreciation renumbering? or how do I keep the same number for the life of the asset?

I believe the only way to do that would be to never delete an item. Alternatively, you make the number part of the description 1-1957 Chevy, 2-Roto Rooter, 3- Typewriter, ... 87-Building, 88-Land, ... 

This been a feature of Lacerte for 38 years, so I doubt asking for a change will be acted on.
