Agreed.  Office 365 E3 and E5 have encrypted connectivity options for MS Exchange.  Additionally Adobe Acrobat will encrypt, as will a paid WinZip application (if you want to take an extra step).  Citrix Share File also provides encrypted connectivity to and from for both the preparer and the client.
